When the bread revolution came to Sweden

I remember in the past when the restaurants here in Sweden was able to put a basket with toast bread of dubious quality on the table to the food. And get away with it. After all, no one ate it.
Bread has been a sad story here in Sweden for decades. Its primary purpose was to have something to put the topping on. It was nothing you ate at the restaurant. You could be filled up and not be able to eat enough of all the other delicious food. Not so strange that the restaurants served the cheapest crap they could find.

As a matter of fact, I don’t understand why they bothered putting any bread at the table at all. I suppose it had something to do with traditions from the rest of Europe. There, you were always served bread with your meal. The difference was that you were never served toast bread if it was not breakfast you were eating. You expected a tasty bread with your meal in these parts of Europe.
But not here in Sweden. Here we were chewing our syrup bread with prickigkorv. Now, the syrup bread is maybe not so bad. But you probably have to be Swedish to like prickigkorv. Consider a salami of inferior quality with a very loose texture.

But ten years ago things started to happen. Interest in sourdough bread began to grow rapidly. Soon there were jars with bubbling sourdough starters all over the country. Finally, even the barbarians up here in the northern periphery of Europa had learned how a good bread should taste.
Of course, the restaurants followed the trend. Today restaurants with self-respect bake their own bread. Or they buy it from a small bakery where bread is considered a craft.

Today you can find good bakeries in most cities. Even in small villages sometimes. And nobody is happier about that than me.
Hey there by the way. My name is Tomas, and this is the first post in my blog. A blog about good food and bread. Especially sourdough bread.
I will write a lot about healthy and tasty food. However, I would like to warn all sensitive readers that all recipes will not qualify as diet food. A few will maybe even be considered unhealthy.
But very very tasty.

But I promise that there will be a lot of useful stuff for you how can’t stand the thought of stuffing yourself with brioche bread and creamy sauces. I’m a huge fan of the Mediterranean kitchen. And everybody knows how healthy the Mediterranean food is. It’s enough to look at it to get a little better health. I promise. It’s scientifically proven. I’m almost sure about that.
In short, I will write about good food. And where there is good food, there is good bread. And good bread is not baked in a factory. That goes for good food as well by the way.
Oh no, you may think now. Another one of those mental guys who is unable to understand that there are indeed people who don’t want to get up at three in the morning to put breakfast bread on fermentation.

Relax. I buy mass-produced bread as well. In the week days. It’s quite okay. I maintain, however, that no one will be happy with it.
But if I have put extra care in cooking a meal I also want to serve a tasty bread. If I am short on time, I buy it. But mostly, I bake it myself.
It’s not that difficult. And it doesn’t have to be perfect. Homemade bread is always good.
So please join me on this travel. There is lots of delicious food and bread to explore. No part of the world will be discriminated.
Please don’t hesitate to come up with tips and ideas. All food that makes people happy has a given place in this blog.
